½ lobster, cooked and chilled in a dill brine. Served with 3 kinds of home-made mayonnaise, grilled country bread and butter

Fillet of beef with lightly pickled lingonberries, a light vegetable terrine and pommes Anna, with a rich jus flavoured with black winter truffle and port

Three home-made desserts, a sweet, delicate end to the evening
